Vegan Banana Oat Pancakes
INGREDIENTS
1 Cup Oats
1/2 Cup almond milk
1 Ripe Banana
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
*Optional - 1 Teaspoon Vanilla Extract
Coconut Oil, For Cooking
*Optional - Maple Syrup
INSTRUCTIONS
Place all the ingredients in a blender, oats, almond milk, banana, vanilla, baking powder, salt. Process until completely smooth.
Brush coconut oil in a non-stick pan over medium heat. Add batter and cook until edges are golden brown, about 2-3 minutes, flip the pancake and cook for another 2-3 minutes. Repeat until the batter is all gone.
Freeze and reheat any extra pancakes. Makes about 10 small pancakes.
