Shiitake Mushroom Lettuce Wraps

INGREDIENTS 

  • 2 tsp sesame oil

  • 2 cloves garlic minced

  • 7 oz shiitake mushrooms minced

  • 6 oz walnuts minced

  • 1/2 tsp salt

  • Hemp seeds

  • 1 tbsp coconut aminos 

  • 1 tbsp Hoisin sauce 

  • 1 tsp rice wine vinegar

  • 1 head lettuce (Romaine or hydroponic butter crunch)

INSTRUCTIONS 

  • Preheat oven to 400 degrees 

  • Clean and stem mushrooms

  • Coat mushrooms with sesame oil 

  • Roast mushrooms for 10 min at 400 degrees

  • Halfway through roasting drizzle and lighting coat the mushrooms with sauce and roast for another 10 min 

  • Add mushroom and walnuts to the food processor and lightly chop

  • Drizzle sauce (to taste) over the mixture and blend again. 

  • Spoon mushroom walnut mixture into lettuce leaves top with hemp seeds and serve.
